Chorizo and capsicum skewers with buttered couscous

ServesServes 8 Skewers


  • 2 chorizo sausages
  • 1 red capsicum
  • 1 green capsicum
  • 250g couscous
  • 375ml water
  • 50g butter
  • salt and freshly ground black pepper


  1. Slice the chorizo sausages into 1cm rounds
  2. Cut the capsicums into 1-2cm squares setting aside any capsicum off cuts
  3. Thread the sausage and capsicum alternatively onto 8 skewers
  4. Get the kids to soak the skewers in water and then they can thread them for you
  5. Place the couscous into a heatproof bowl
  6. Boil the water and pour over the couscous
  7. Add the butter, cover and let stand for 10 minutes
  8. Using a fork, mix through the butter and fluff the couscous
  9. Season with salt and pepper
  10. Finely dice any of the capsicum off cuts and mix through the couscous
  11. Barbecue the skewers until charred and serve with the couscous
