Cinnamon yoghurt pancakes with maple syrup and banana
Serves 4
Ingredients
- 3 eggs, separated
- 50g caster sugar
- 75g plain flour
- 1 tablespoon cornflour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 250ml yoghurt
- Butter for cooking
- 2 bananas
- Maple syrup
- Cinnamon
Method
- Place the egg yolks and sugar into a large bowl and whisk until pale and creamy
- Sift together the flour, cornflour, baking powder, cinnamon and salt
- Fold through the egg mix and then add the yoghurt
- Whisk the egg whites until stiff and gently fold through the batter
- Heat a large non stick frypan over a medium heat
- Add a little butter then when it is foaming add 1 large spoonful of batter
- Cook until golden then flip and cook the other side
- Stack onto serving plates and serve with diced banana, maple syrup and a sprinkle of cinnamon
