  • 2 cloves garlic
  • 1 small Spanish onion
  • 750g tomatoes
  • 1 small red capsicum
  • 1 Lebanese cucumber
  • 2 slices crusty white bread
  • 75ml olive oil
  • 125ml red wine vinegar
  • 125ml water
  • 2 teaspoons sea salt


  1. Peel and dice the garlic and onion
  2. Chop the tomatoes and cucumber
  3. Soak the bread in the oil and then place all of these ingredients in the bowl of a food processor and blend
  4. Add the vinegar, water and salt
  5. Serve well chilled with extra bread for dipping
