Olive, white bean and orange salad

  • 3 oranges
  • ½


small Spanish onion
  • 12 Kalamata olives
  • 400g tin cooked white beans
  • 50ml olive oil
  • sea salt and freshly ground black pepper
  • parsley leaves

  • Notes

    1. Peel and segment 2 of the oranges and place into a mixing bowl
    2. Peel and finely slice the onion
    3. Remove the stones from the olives and cut into slivers
    4. Drain the white beans and add them, with the onion and olives, into the bowl
    5. Juice the last orange and pour over the salad with the olive oil
    6. Season with salt and pepper, toss through the parsley leaves and serve
