roast turkey breast roll with peach, onion and fetta salad
Serves 6
Ingredients
- 50ml olive oil
- 10cm sprig rosemary
- 1 rolled turkey breast, approximately 1kg
- salt and freshly cracked black pepper
- 2-3 red onions, peeled and quartered
- 2-3 peaches, quartered and stone removed
- 3/4 cup crumbled feta cheese
Method
- Blend the oil and rosemary until the rosemary is finely chopped into the oil
- Seal the turkey roll with a little of the oil in a hot pan to colour the skin then place on a roasting rack in a large roasting tray
- Baste with garlic and rosemary oil, season and roast for 45-60 minutes until turkey is cooked
- Remove from the oven, cover with alfoil and allow to rest for 10 minutes
- After 20 minutes of the turkey roasting add into the roasting tray the onions and peaches
- Drizzle over a little of the rosemary oil and continue to roast
- Serve the sliced turkey breast with the roasted onions and peaches topped with the fetta and a little rosemary oil drizzled over
