Southern Fried Chicken

  • 1 x 1.5kg chicken
  • Sea salt to taste
  • 3/4 bunch thyme
  • 3/4 bunch oregano
  • 1 tablespoon ground white pepper
  • 1 tablespoon ground black pepper
  • 1 tablespoon paprika
  • 1lt butter milk
  • 500g plain fl our
  • 350g bread crumbs
  • 80g corn fl our
  • Vegetable oil for deep frying
  • Fresh limes


  1. Chop chicken into pieces, ensuring each piece has a bone on it
  2. Season chicken well with sea salt, thyme, oregano, black pepper, white pepper, paprika and butter milk
  3. Leave overnight
  4. The following day mix the fl our, bread crumbs and corn fl our and drain the chicken
  5. Mix the chicken with the crumb mix in a plastic bag and allow to sit for a few minutes, then deep fry in oil until golden and cooked through
  6. Season with more sea salt and serve with fresh lime
