Strawberries with meringue and yoghurt

ServesServes 4


  • 500g natural yoghurt
  • 40g icing sugar
  • 1 teaspoon vanilla extract
  • 1 punnet strawberries
  • 30g icing sugar
  • 16-20 small meringues


  1. Place the yoghurt into a sieve lined with a clean chux and let it drain for an hour
  2. Mix with sifted icing sugar and vanilla extract
  3. Wash and hull the strawberries
  4. Puree in a kitchen whizz or blender and then pass through a sieve to remove the seeds
  5. Mix with the sifted icing sugar and vanilla extract
  6. Wash and hull the next punnet of strawberries and cut into quarters
  7. Layer the fresh strawberries with the yoghurt, strawberry sauce and crushed meringues, a good job for the kids, and serve
