Method
- 4 skinless chicken breasts
- 1 teaspoon sweet smoked paprika
- 1/2 teaspoon sea salt
- 4 large potatoes
- 25ml olive oil
- 1 red capsicum
- 1 green capsicum
- 1 yellow capsicum
- 1 clove garlic
- 1 red onion
Notes
- Slice the chicken breasts into 3 pieces lengthwise and pound out with a meat mallet until 1/2cm thick
- Season with the paprika and salt and set aside
- Peel the potatoes, dice into 2cm cubes; blanch in boiling water for 4-5 minutes and then drain
- Heat the oil in a large frypan; add the potato and saute until golden
- Add the paprika and salt, toss to combine and keep warm
- Deseed and finely slice the capsicums
- Peel the garlic and onion and slice thinly
- Heat the olive oil in a large frypan over a medium heat add the onion, garlic and capsicums, cook slowly until soft and sweet and keep warm
- Heat a little more olive oil in a large frypan and saute the chicken until cooked
- Divide the potatoes and capsicum mix between 4 serving plates
- Top with the chicken and serve
