Whiting Ceviche
Serves 4
Ingredients
- 8 fillets very fresh whiting, sliced
- Juice from 2 limes
- Juice from 2 lemons
- Juice from 1 orange
- 1 celery heart, chopped
- 1 small cucumber, sliced
- 1 red capsicum, chopped
- 1 red chilli, chopped
- 1 small bunch coriander, chopped
- 3 spring onions, chopped
- 2 ripe tomatoes, skinned, seeded and diced
- Sea salt
- Pepper
- Drizzle of olive oil
Method
- Place the whiting in a bowl and cover with the juices, season with salt and pepper and leave for 5-10 minutes
- In another bowl mix celery, cucumber, capsicum, chilli, coriander, spring onion and tomatoes
- Once the fish is just cooked through, but still a little raw in the middle, add to the other bowl with all the juices
- Mix quickly, adjust seasoning and arrange on a plate with a drizzle of olive oil
